Part 2!

Almost Caprese
Inspired by Roxy's Grilled Cheese in Boston.
Bread: Classic White
Spread: Butter
Cheese: American or Havarti or Mozzarella
Extras: Fried tomato and pesto
Pairing: Dill pickle
I fry my tomato slice with plenty of salt and pepper before putting it on the sandwich. You can add mushrooms for a bit of extra pizazz. I love the Trader Joe's jarred pesto for this.

Sweet Cheese,
Inspired by a wine and cheese plate.
Bread: Brioche
Spread: Butter (cinnamon sugar)
Cheese: Havati, Brie
Extras: Fruit Preserves (fig or pear or apricot)
Pairing: Salty chips
This is almost a dessert sandwich. The fruit jam pairs with the mellow cheeses and the cinnamon butter. The chips add a bit of saltiness to cut through the sugar!

Goat and Garlic
I stole this from the melt shop
Bread: Sourdough
Spread: Garlic Aoili
Cheese: Muenster, Havarti, Goat Cheese Crumbs
Extras: Optional Roasted Tomatoes inside
Pairing: Tomato Soup
The goat cheese is a very strong flavor that needs to be balanced by the sweet tomato sauce, do not skip it!! I use the Trader Joes branded soup and it's perfect.

Some Disclaimers:
- I am a vegetarian so none of these have meat, but it would be easy to add your own ham or bacon.
- I'm not a chef I'm just a home cook who loves grilled cheese, so take all this with a grain of salt.
- I put Trader Joe's garlic salt on top of almost everything I make, not listed on the ingredients here.

Let your grilled cheese rest on a wire rack before cutting (yes, like a steak.) This prevents the bottom from steaming and getting soggy! An underrated step. I cook mine in a nice skillet with a lid on to
trap the heat and melt the cheese. If I'm using butter I will melt it in the pan first instead of buttering the bread, this makes the coating more even for grilling!

I use an extra large spatula for.... flipping (it's almost as big as a standard piece of bread.) Don't be afraid to use a knife on top for more stability while flipping! I have a bad habit of messing up and then the cheese gets misaligned and it's annoying. It's better be careful while flipping your sandy.
Don't be afraid to experiment! I love using different types of honey on top of my sandwiches. It doesn't have to be normal bread either, I love a grilled croissant with honey. It's hard to go wrong with hot honey and cheese. Have fun!

Bread: Rye or Wheat
Spread: Olive Oil
Cheese: Burrata
Extras: Avocado mash and egg of your choice
Pairing: Morning coffee
A delicious breakfast sandwich, the burrata is super creamy but should be heated separately from the sandwich because it's so wet. Maybe this is more of a melt actually, lol. It's yummy though.

Panel 3: Then put the goods into the blender in this order: 1. Strawberries 2. Vanilla 3. Milk. And then add as much honey as you want for sweetness.

Panel 1: then blend it together until it’s somewhat smooth, no lumps. This may take a few minutes.
Panel 2: pour into a cute glass.
Panel3: then enjoy!
