It's getting colder as the days go by. That means it's 'SOUP' time. I love soups. A warm bowl of soup feeds the soul. This is my homemade vegetable beef soup. All fresh vegetables, our own beef and the soup is spiced to my ideal of perfection. 🍽

I get the year off for making dinner for Thanksgiving. For over thirty-five years, it's been just myself making dinner. It's a lot of work. I start two days in advance, and my recipes are from scratch. Today I made the green bean casserole. The mushroom soup is homemade. I add cheese to the dish.

I haven't been able to make my enchiladas in over a year. I've just been too busy. I found the time today. These are chicken enchiladas with a homemade sauce, Hatch chiles, and queso, with Mexican rice to complement them.

I salute and honor all my fellow veterans who donned the uniform and stood watch. We're less than 1% of the population that took the 'OATH' to secure and protect the Constitution for the good of our nation. I wear my Navy hat today. Go Navy, Army, Air Force, Marines, Coast Guard, and Space Force.
