The Museum needs some examples of some of the extreme packaging publishers resorted to to grab their audience's attention (and their dollars) during the bubble, and that's certainly one of the most extreme.

Sometimes I think these recipes were conceived entirely on a dare by the bored test chefs/home economists at these corporations. Literally just pulling random ingredients out of the fridge and saying "I bet you can't put THIS into a jello salad!"

But even the Victorians had enough good sense to not mix the sweet and the savory in their jellies, and certainly not in the chaotic combinations you see in the 50s and 60s.

...and why do the savory ones always use lime or lemon jello?

I know part of the reason Boomers went crazy for these abominations was because their parents and grandparents told them about The Old Days when aspics were high-class because it meant you had the money and staff to devote to them in the days before commercial gelatin and/or refrigeration.
