I also make a killer uncooked applesauce: dice or shred unpeeled apples, then puree in blender with as much grated fresh ginger as you can stand, a teaspoon or so of powdered ginger, a good splash of lemon juice, a dash of salt, sweeten if necessary. A little cider or white wine doesn't hurt.

I like to roast or sauté sausages with apples and onions and maybe a bell pepper or two. Just the apples and onions sautéed together are also good. And I've made a variation of Thai green papaya salad using shredded or julienned apples.
