I believe it less with Mario Kart because of how protective Nintendo is in regards to their brand. I believe they’ve also given a statement to that effect.
The real problem with catching something like this is now you really can’t trust that their process didn’t involve other uses of AI

From what I can tell it was some Reddit sleuths that found them (AI generated textures for things like posters) that were later removed in a patch. Apparently placeholders? But I dunno if I buy that excuse after so many cases of this happening with other projects.
