Notes: lime zest has a very strong flavor; you may need to add more zest if you’re using lemon.
Freezing your zest is an excellent way to preserve its flavor for later use. When buying fresh citrus, zest it before you squeeze it. (Btw, fresh IS WORTH it)
FRESH dill is important! It doesn’t dry well

Combine the first 3 ingredients(4, if youre using dried tarragon, to draw out the flavor) and let simmer for at least 6 minutes. Add the lime or lemon zest and dill, mix thoroughly, and add to your pasta.
And you’re done!

And the sauce:
*approximate measurements
Half and half (1/2 cup)
Butter 2 Tbsp
White wine 1/4 cup
Tarragon 1 Tbsb
FRESH Dill 2TBSP
Lemon or lime zest 1/2 tsp
Salt and pepper to taste

1lb salmon, pan fried with salt and pepper
1lb pasta
2 bags frozen peas (24 oz)

Notes:
Smoked salmon is more expensive, but yields a richer flavor

Instead of using my colander or slotted spoon (both in the dishwasher) I scooped my sweet potatoes against the side of the pot, lifted it from the water, and transferred them to a bowl. This got rid of the water almost as effectively, if more time-consumingly, as a colander.
