See, I consider tortillas and injera and the like "bread". So we're in alignment.

But the quesadillas at my local birrieria use huge tortillas, folded over.

Taxonomy take:
Flatbread (self descriptive)
Sandwich (separate bread)
Taco (single bread, folded)
Wrap (single bread, all the way around)
Stuffed pastry (single bread, baked around filling)

Hot dog? Taco (until bun breaks).
Quesadilla? Possibly taco, likely sandwich.
Hot Pocket? Stuffed pastry.

To my earlier point... Sweet Potato Pie very easily (and deliciously!) becomes Sweet Potato Waffles in just a blink of the eye.
