tl;dr - the reason why pro-censorship groups, notably Collective Shout, have influence over the payment processors is because they’re backed by a lobbying group called GOSRN (the Global Online Safety Regulators Network)

if you’re looking at the PP censor situation, you might want to look into this.

I actually received a callback from Stripe within a few hours! I got a direct call from a single Stripe employee who was very kind, but the non-personal number he gave me to file complaints or to ask further questions for US consumers is:

Be polite but make your voice heard!
Do you wanna contact Stripe? They don't have a phone number from what i have dug around for (please put it in the comments if you find it), but here is their complaint form.

If you're an accountant or something for a small business like me, remind them why you won't use or are moving away from them

Do NOT be a nutjob and go for a home address or personal email. There are reasonable ways to contact CEOs.

Collective Shout, the group that took credit for bullying Mastercard into recently censoring more platforms, stated that apparently it took them ~1000 phonecalls to convince them to give them what they wanted?

ok then. one angle of attack then needs to be actively bombarding Visa and Mastercard's phone numbers and emails.

are customer support phone numbers/emails the best avenue to start with or is there a better option?

I found that calling this Visa number didn't work, as the people here can only handle complaints regarding cards and accounts from what I can tell (unless I'm doing something wrong?) I did however find what appears to be the number for Visa's headquarters. Do with that what you will
