I haven't made latkes in forever (low oxylate diet) but this is how I did it, so it's pretty simple:
Recipe: Latkes (Potato pancakes) About two medium potatoes. An onion. You want at least a forth of the resulting batter to be onion, but you could probably even do 50-50. But a forth to a third is probably best. An egg. Maybe two; put one in and see how it looks. Matzoh meal. Or bread crumbs. Can also use flour. Send potatoes through food processor. I use the smallish grater, which is the only grater I have. I wouldn't use the large grating holes of a hand grater. Squeeze out potatoes with potato ricer. Toss them in a medium bowl. Send onion through food processor. Throw in bowl. Mix potatoes and onions together. Break an egg in. Use a second if it seems necessary. Throw in a couple of tablespoons of matzoh meal. Stir everything together. Sprinkle with pepper and a little salt. Put some oil in frying pan. Make patties in pan. Cook around six minutes on medium. If they've browned, flip and cook another three or four minutes. Serve with applesauce.

Love how Mamdani ties corruption to the affordability issues in NYC. Guy's always on message. Dems could learn a lot from him if they just stopped running away from him.

One of the frustrations of #TheGuardians lack of a comment section is I have no way to tell this guy to fuck himself in the ass with a red hot poker. Not because he says Trump is not always wrong, but because he thinks the guy who has coated the White House in gaudy gold plate has an eye for beauty.
