The secret via many Greek women when I lived in Greece: soak beans + dump that water. Add new water, bring to a high boil + DUMP that water. Add new water to those beans, again bring to a high boil + keep skimming the scum off the top w/ a spoon. Cook on low flame for a few hours. Cheers from NYC.
