Day 2 of cooking w/tallow: Ate so good we passed out for two hours afterward….jalapeño-cheddar brats with roasted brussels sprouts + potatoes, side salad, and pumpkin cream cheese bars for dessert.

My friend who I rendered tallow with used some to cook Swedish sausage with asparagus and mushrooms that were sauteed in a tallow-gochujang sauce. Absolutely delicious.

Today me and a friend spent 7 hours rendering beef tallow. Its a laborous process we made simpler by melting suet in a slow cooker, breaking it up w/a immersion blender, sifting out the impurities, then allowing it to harden, lather rinse repeat.
Packaged beef suet. Perhaps about four pounds of it. Cut up chunks of beef suet in a slow cooker before it melted down. Melted suet in a slow cooker. It is a clear liquid with light brown-grey scum on top. After first round of rendering, the hardened tallow is getting the impurities that sank to the bottom removed with a knife. We would repeat the whole process again in a few hours.

I am halfway through this book I found in a little free library. Hard to put down. It scratches the itch for something good and pulpy.
