Mediterranean inspired.
A bed of greens topped with shaved carrots, roasted cauliflower, roasted broccoli, roasted chick peas, couscous, a sprinkle of parmesan cheese, sunflower seeds, fried halloumi, and dressed with homemade tzatziki.
