it's my go-to. simple and good. you can gussy it up with a little onion if you like. it's certainly easy to adapt.

douse them in olive oil, salt, pepper. roast 25 min at 425f. dress them in a bit of maple/apple cider vinegar vinaigrette emulsified w a touch of whole grain mustard. yum!

fortuitous timing as all the news broke yesterday about the issues other cities are having with the company's cars failing to follow traffic regulations and stranding passengers. hard pass if they do hit the streets here.
