The sky above the Ridgefield wildlife refuge is agitated by the approaching atmospheric river.

After the rains come, the fields turn into shallow lakes inhabited by massive flocks of waterfowl.

Today I saw about a dozen sandhill cranes, six swans and one eagle.

I see no ships at the grain port in Longview. That's sad. It's harvest time, and the grain elevator should be busy.

Mt. St. Helens in the background currently has no snow, but don't worry, we are not having a drought. It's been an excellent growing season.

Beat an egg, drop in the zucchini, then coat it with the flour and fry it in hot oil.

Add dry ingredients to moist ingredients until you have a thick dough. There should be a little bit of flour left. Stir in1/3 cup raisins and 3/4 cup pecans. Drop spoonfuls of dough into the flour, roll into a ball, and flatten slightly. Bake 12-15 minutes.

Use the leftover flour on the zucchini.

Stir the flours together with a fork

In another bowl, cream together:
3/4 cup butter at room temp.
1 tsp almond extract (or vanilla)
1 egg
1/4 cup sugar
1/2 cup milk (you may add more later)

Add in
3/4 cups oats
1 tsp baking powder

Notice I am toasting the pecans in the toaster oven (optional).

Preheat oven to 350

Please make reasonable substitutions if you are sensitive. For example, you can use almond milk and coconut oil for milk and butter.

You will need 3 cups flour. I used 1 cup each cassava, millet and potato starch. You may substitute any flour combination that works for you.
