That said for something like salmon run, it could absolutely work given the surplus of much bigger targets.

I think it probably wouldn't work. Mainly because I'm of the opinion headshot mechanics are only really viable on first person games/options. Enemies will always be too small and far away from the camera for headshots to ever be practical.
