There should only be one if you're in Act 1, if there are two spawning for you in Act 1, let me know so I can bug fix it. Otherwise, throw a jab to check if they guard, then jump crossover and attack from behind. When the alert happens from their special meter, run far away to avoid the vortex.

For this, I only used one layer on the character. I will break the body parts into separate layers when I begin animating.

Yes, I tend to use colored outline on soft things like hair, fur, and occasionally skin. I also have hair on a seperate layer when animating, and the different line color helps me keep track of things when it overlaps different parts of the figure.

Yes, the camera position is determined by the average of all active player characters. This enemy specifically tries to target from mid to long range so it runs towards the boundries frequently.
