Do this with some red rice and tortillas.
2lbs ground beef in hot pan w oil. Break apart meat, season w/ 1 Tbsp salt. Cook until no pink then add half a diced white onion. Once onion is translucent add two diced Roma tomatoes. When tomatoes break apart add two diced yellow potatoes. In blender add 3 Roma tomatoes, 1/4 onions, 1-2 Serrano peppers, 2 garlic cloves, 1 tsp salt, 1/4 tsp cumin, big pinch peppercorns, 2 cups water. Blend until smooth. Pour salsa into pan. Mix and cover for 10-15 minutes.
