I'm getting lots of guajillo peppers from our garden, which I am drying and turning into chile powder. I used some of it and our homegrown tomato sauce to make an enchilada casserole this week. Leftovers freeze well too.

I'm getting lots of guajillo peppers from our garden, which I am drying and turning into chile powder. I used some of it and our homegrown tomato sauce to make an enchilada casserole this week. Leftovers freeze well too.

Lunch yesterday was a bean and cheese quesadilla with homemade hot sauce, and my first taste of the Beefy Purple tomatoes from our garden. It's a thankless job doing the tasting, but I get to do it! I gave them two thumbs up.

We had #Asparagus Mimosa one day for lunch this week. It's one of my favorite treatments for our homegrown spears. We steam them, then grate hard-boiled egg over them and sprinkle with sea salt and capers. Finished with a drizzle of good EVOO, and served with my home-baked focaccia bread.

It's not all about asparagus here. The lettuce is still going strong too! We used some of this head to make my wife's wilted lettuce salad, an old family recipe of hers.
