have you ever had chicken marbella? that’s fine with figs and green olives and white wine and the three ingredients do a nice job of balancing sweet, salty, and acid. similar thing here with the dried apricots, olives, and preserved lemon

I added a few different whole grain spices (cardamom, coriander, a chili pepper) and used turmeric instead of saffron but kept the cooking steps the same, but yeah it is an amazingly simple fragrant and hearty stew for just vegetables and legumes!
