These extended scenes are a creative choice that would (virtually) only occur in an extended series. I don't think you can fault people for taking issue with what many consider to be creative excess.

But as I've said elsewhere, if you can portray a person's lifetime in 2-3 hours successfully in a film, you can convey that someone is bored, lonely, or isolated in less screen time than Pluribus does. (This seems to be the primary defense of the scenes- that it helps a viewer "feel" Carol's plight)

There's a difference between, "Pluribus is boring and it sucks" and "I think Pluribus is at times bloated and suffers for it." I don't need to tell you those are not the same thing.

That would never happen in a film that had to come in under 3 hours. In an open-ended show, it (to me- ymmv) feels like filler to extend a series.

I'd respectfully disagree. If a lifetime (or one's important life experiences) can be successfully portrayed in 2-3 hours in a well-made film, for example, I don't agree that someone's 5-7 days worth of solitude leading to a breaking point can't be portrayed in fewer than 2-3 hours.

I've said it elsewhere (previously on BSky), but while I've generally enjoyed the show, I think it's "padded" to extend its shelf life--especially if it's not a show with a pre-determined ending.

Then ask yourself: how many times, when subjected to listening to the vmail message, in its entirety, again, was Carol doing something that advanced the plot. (It's happened once or twice, but the majority of times we hear it, it isn't happening.)
