Usually players invited to streams are vetted through other players' experiences, or have been pleasant guests on other streams.
I guest on other people's live streams regularly and the etiquette is usually understood. I have only experienced one person being salty and scooping on stream.

Agree. Commander for content is more more skewed to the side of "Everyone should get to do things, and definitely don't knock one person out too early." Especially commander for streaming, because the last thing you want is for things to get awkward live.

Theft decks are pretty easy with InfiniTokens, but I'd recommend against any that search an opponents' library or keep a stolen card secret (unless you don't mind the other players knowing).

There are a lot of decks that are possible over webcam with InfiniTokens, but some are more a question of SHOULD you than COULD you.

Fortunately, you cannot have +1/+1 counters and -1/-1 counters on the same card anyway. They cancel each other out, and the amount that adds up to 0 total are removed as a state-based action. Only one of those two types can exist on the card at a time once SBAs are checked.
