If I'm smoking a bird, the effort to spatchcock it is well worth the effort imo. Cooks more evenly, faster, and takes on a lot more smoke.

Yeah that photo was very clearly photoshopped, not AI. You can tell by the pixels and from seeing quite a few shops in my time.
