My brother was diagnosed with celiac two years ago so I've been making this cranberry curd tart for Thanksgiving that's been a huge hit (almond flour crust)
NYT cooking has a similar recipe with a rice flour + hazelnut crust but I haven't tried that

it's definitely not true of modern lights and even with incandescent the break even point is like, a few seconds if I recall. I think mythbusters did a b-story on that. might be more true of some specialty lights like halogen? but still not enough to matter.
