Probably leap year shenanigans. There's a couple minor calendar changes like that, like the time they realized that every four years you actually add .97 days or something, so a full leap day every 4 years is technically too much time, so every hundred+ years you skip one to account for that.

Tons of reasons, microbes spread more evenly across a round surface (no corners to get bunched up), it's easier to transport a 50lb wheel you can roll, and historically it was made in round pots/barrels so people *expect* it to be round, ie wheels sell better. (thank you, Ashe County Cheese, lol)
