Happy accident in the kitchen today and my lentil soup game is forever changed. Discovered I only had 1/4 cup brown lentils. Found 1/3 cup of red lentils and about 1/3 cup of split peas. I added them all to the Instant Pot with vegetable broth, water, tomato, carrot, mushrooms, and onion. So creamy.

Years ago after hearing about Baltimore‘s Vegan Restaurant Week, I decided to start one in Colorado Springs. It went on for many years and grew from 7 restaurants to over 30! It’s such an amazing community event. Love seeing them pop up. Here’s one in Pittsburgh!
