Recipe follows: LOUISIANA GUMBO (BIG JIM'S) Note (JWB): This is a dish with the most humble of beginnings that has become fashionable, and our family has always liked it for special occasions. At its heart, however, it is nothing more than a vegetable stew made with roux, using whatever vegetables and left-over meats or seafood you have in the kitchen. We like it best with seafood (crabmeat, crawfish and shrimp), but have eaten wonderful versions made of chicken or turkey, andouille (smoked sausage or Kielbasa) or even wild duck meat. The secret is really plenty of vegetables and the spices. With some hot french bread it even makes a good meal for company. Ingredients: Chop up about four-six cups of green and leafy vegetables. We use about the following, but it varies (i.e. you can use leftover green beans or green peas, for example, and perhaps a can of corn, etc, depending on what you have on hand. Lots of folks use a few tomatoes or a can of peeled tomatoes): 1 cup chopped celery. 2 cups chopped onion. 1 cup chopped green pepper. 1-2 cups cut okra. (I usually buy it cut & frozen). 1/4 cup chopped parsley 6 cloves of garlic chopped finely 3-4 cups of water 1-2 Tablespoons of Tony's Gumbo spices or an equivalent amount of gumbo spices of other sorts. 2-4 Teaspoons "File" (sassafras powder?) 1 lb. of small peeled shrimp 1 lb. of crabmeat or leftover chicken, or whatever 1 lb. crawfish tails 1 qt. shucked oysters in their liquor. 1/2 Cup vegetable oil 1/2 Cup Flour Second photo of a recipe. Recipe is too long for alt text, an abridged version follows Directions: Make a Roux out of the oil and flour. The foolproof method is to do the roux in the microwave which will not scorch unless you simply get incredibly careless. The technique is to whisk the oil and flour into a paste with your gravy whisk, and put it on high for about 4 minutes in your microwave. Take it out then, whisk it some more, and put it back in for about 2 more minutes. Then take it out, whisk it some more, and put it back in for consecutive 60-90 second bursts until it gets brown and bubbly. (I do this in the bottom of a 1 quart pyrex measuring cup.) When you have the roux to the color you like (and it begins to have that slightly acrid smell of gumbo flavor), then you scoop out the roux into your bowl of cut vegetables. Stir the vegetables up so they get coated with the roux, and then heat the roux-coated veggies for about 5 minutes at high in your microwave to begin to soften the veggies. (If you insist on the traditional black-iron skillet method from the beginning, you saute the vegetables in the browned roux for a spell.) Then, add the softened veggies and roux mix to the water and the Tony's seasoning in a big microwave bowl. (I use the big corningware covered casserole dish 6" deep). Let the veggies and water and roux cook on high for about 15 minutes in your microwave. (or boil them for a spell in your black-iron skillet). Next: Add your uncooked meat or seafood. (i.e. the shrimp, or crab or crawfish, or sausage, turkey, etc. but NOT the oysters). Let the stew of vegetables and meats or fish cook for about 25 minutes on 50% power in your microwave, or else simmer on low for a long while in your skillet. Final, brief page of a yellowed, three hole punched three page recipe. Text follows: After the seafood or meat has been cooked like this, add oysters if you're doing the seafood variety, and cook for the last ten minutes on high in your microwave, or until the oysters curl in your skillet. Sprinkle the file' on top of the stew and let it cool for about 5 minutes before you serve it. (I make no warranties about the skillet method, being a lazy microwave type myself.)

I moved from California to Pennsylvania a few years ago but I still react to seasonal change like I grew up on Venus. Turning leaves! Apple cider! Dogs wearing sweaters! It’s all brand new to me, still.
