Today, at my delayed (to reasons beyond my control) Chaunkah party, I thought, what the hell and made a batch from sweet potato. They didn't bind together as well, but they tasted pretty good.

As soon as I post this someone will tell me that sweet potato doesn't fulfil the mitzvah...
