Add ham hock, 2 thick slices smoked bacon
Ground 6-10 pepper corns, 2-3 cloves, 5-10 juniper berries, put in tea egg.
Bouquet garni w thyme, bay leaves, rosemary.
Cook 2 hours. Remove hock & bacon, bouquet garni & tea egg.
Mix finely.
Cut meat to bite size. Add smoked sausage rings. P&S
Eat next day
