I think the trick is to have an informative midpoint (e.g. an average). If done well, the color scheme can read just as well as a linear divergent scale, i.e. it gives information about how much deviation from the mean (lightness, chroma), and in which class direction (hue).

I started talking about the surprisingly large probability of loosing a child in the year following fetal viability. "It's all nutrition", I was informed, "I raise cattle". This was the second time someone brought up cattle upon hearing about my research. I should start to listen.
