What does a person even eat on a pretty strict low histamine diet? The full answer is that it can vary, but this is at least what Kate's eating!

(Please don't hop in my replies to suggest random foods I can't eat--that's a big bummer!)
Since I've got a lot going on right now preparing for my next phase of treatment, I've signed back up with a local personal chef service that I've used before and loved.

Today's lunch is a GF veggie lasagna, with a beet sauce since I can't have tomatoes. Close enough, and beautiful!

being at the end of my prepared food rotation means I have to / can eat just rice and paneer for lunch and don't have to apologize for it 😈

(chef person's next visit is Tuesday! food will be a little funny til then. I'll definitely be over subsisting off rice and paneer by then)

Still trying to find a protein powder other than hemp to have in my rotation of protein. (I don't much like meat, I'm so tired of eating it!)

Hemp is fine it's just not very tasty; mixing it into a cup of almond milk tastes like a gritty, grass smoothie. 😐

This looks interesting? Giving it a try!

Bad news folks: still waayyy too much histamine, I'm guessing probably thanks to the meat not being frozen quickly enough after butchering.

Back to the drawing board to find things to spruce up what I can eat right now...
I ate one strip today, we shall see if I get the typical(-for-me) nocturnal MCAS flare or if it's within histamine budget. 🫡

(Really hoping it's sufficiently within budget bc I really need: 1. to add more interest to my food, 2. a win, just fucking in general.)

Realizing I needed to return with the result:

It actually turned out impressively bacon-y. (I would take photos but all the cooked strips are packed away in the freezer for later meals.)

I'm going to tinker with the recipe next time a little (molasses instead of the sugar, add salt when cooking)--
I'm attempting home DIY bacon in the lowest histamine way possible

(it is already sliced, it only cures overnight, it gets a little liquid smoke, then is cooked and...I don't know how well cooked bacon freezes but we're going to find out)

We shall see how it goes 🧐

- This week's fruity oaty cake: usual oat bran and oat flour, hazelnut flour like last time, but also a good portion of buckwheat (I love buckwheat). Fresh black currants.

- sauce: a bit of ghee, coconut milk, crunch Barney (almond) butter

Lunch! Few things get me out of my "I can eat barely anything 😭" funk like a salad with some warm toppings. Feels like I'm at a restaurant. 😌

Roasted chicken and roasted beets, with fresh paneer, pistachios, and chives. All on top of baby kale with tahini-sumac dressing.
