What does a person even eat on a pretty strict low histamine diet? The full answer is that it can vary, but this is at least what Kate's eating!

(Please don't hop in my replies to suggest random foods I can't eat--that's a big bummer!)

I really need to make sure I'm getting my veggies for gut motility & overall gut health reasons; I'm glad I had this back-up bag of veggies and that microwaving some for a couple minutes halfway steamed them to chewable!

That's super weird that the formulation varies between US and Canadian versions though? (I'm just rereading the label now and realizing it doesn't have stevia, it only uses monk fruit.)

Is that common?

Oh, yeah I can't have sugar, and I tolerate stevia very well.

FYI for the future that many of my recommendations reflect that 😔 I know everyone's different on this!

I ate one strip today, we shall see if I get the typical(-for-me) nocturnal MCAS flare or if it's within histamine budget. 🫡

(Really hoping it's sufficiently within budget bc I really need: 1. to add more interest to my food, 2. a win, just fucking in general.)

just noticing salt dust on the napkin, sorry for that small mess :)

one upside to my medically-specified diet is that I can eat as much salt as I want, so I get to (nay, am *supposed* to) liberally salt everything

that's kinda fun I guess?

oops!, and a spoonful of chunky Barney almond butter

these muffins are among the few things I can eat that I really crave and can eat almost indiscriminately (within the low volume limits of my belly :) )

I should put the recipe on my blog sometime soon 🤔

(I like adding turmeric to the oil so the paneer gets extra golden-y!)

Should make 4-5 servings, and it freezes well.

Put the paneer on top of the porridge and top with scallions.

(I also really like adding pistachios or hemp seeds if you want the stretch the number of servings further!)

- Pour in 2 cans of coconut milk.

- Reduce. It's gonna take a little while. (15-20 mins?) Stir occasionally, especially once it gets rather reduced.

- Check salt level and adjust as needed. Set aside.

- In a different, small pot, fry some chopped paneer.

In a big pan with high sides or a pot:

- Chop a bunch of garlic and sauté in oil, allow to get golden-y.

- Pour in two bags of frozen riced cauliflower. Add some salt and possibly more oil so it doesn't sick.

- Cook the cauli until it too just starts to get golden-y on the edges.
