Best advice I can give regarding learning ableton is just pick one tool at a time and try to learn the ins & outs. E.g. just pick one synth and really try to understand it before delving into others + VSTs. Also be cautious with YouTube tutorials, lots of wrong infos there, lol.

Bitwig definitely works with Linux. It's kinda similar to ableton and IIRC was developed by ex-ableton devs.
