They only run in compatibility mode, but it's way better than bonzai buddy.

You may need to install ntfs-3g driver to mount NTFS so that Mint can mount the drive. If it's succeeding in making the partition but can't access it natively. Like encryption without a key sorta.
ExFat could work too, since it's just for file storage. That's another route to try too.

Gnome makes Ubuntu heavier to be sure, but its not very noticeable on my machines. Minimal install is 9.9GB, with nothing added as of Desktop 24.04.3 LTS, just now checked.
You can change the GUI to something besides gnome, then purge gnome, I know I did that once to get RDP to play ball.
