I had to make 5 dozen cupcakes, thus pressed -all- my muffin pans into service (generally I don’t do anything so scientific as test my pans before hand). And like Emma Peel, I am merely a talented amateur.

Today I learned:
-silicone muffin tins do not bake as evenly as metal muffin tins
-making buttermilk substitute when you run short takes a minute, works fine.
-making a cake flour substitute takes 5 minutes, works fine.
-my favorite yellow cake recipe makes far more cupcakes than expected.

I just read a fantasy version of A Tale of Two Cities (A Far Better Place, I think, but I’m not home with the book to hand).

So far the Sarah Tolerance books cover 1810-12. The fifth and last might stretch as far as 1813. And while I managed to get both Mary Wollstonecraft -and- Mary Shelley into book 3 (it is alt-history) there’s no sign of Dickens.

-We serve an international audience, a majority of which is outside the U.S.

-The Gulf of Mexico is an international body of water, and the U.S.’s authority to rename it is ambiguous.
