today i learned you shouldn't sear salmon that still has the scales on (cuz i was too lazy to descale and was just gonna chuck the skin today) cuz THE SCALES WILL INCINERATE AND SEND SMOKE EVERYWHERE...... descale or skin your fish before searing it on high heat in a pan folks...... or just bake it
