In our apartment we have a large gold shelving unit that we kept when my MIL passed. The top shelf is like our little memorial to her. Every year since she passed I decorate a tiny Christmas tree, i put lights on it and place on the shelf right next to her ashes. She loved Christmas so much.

Sitting here trying to process the fact that I had one of those “this just might be paranormal” experiences this morning. I chose not to investigate because I was already running late for work and I wasn’t ready to freak out at 430 am while my man is out of town 😭

That said, I will stay in my lane and never bring it to a potluck or anything like that because I know it’s definitely not what people would expect for Mac and Cheese. I’m going to start calling it Mex and Cheese 😂😂😂

I have adapted my recipe to my very Mexican palate. It’s basically a Spicy 🌶️ Veggie Mac and Cheese. I love it and so does my extended family. It’s my favorite thing to make for the holidays 😋
