In the last week, I have:
* Prepared a batch of lardo, a coppa, & a pancetta for the first time by myself.
* Spent almost 8 consecutive days making pork stock.
* Ground up 2 hams for a homemade SPAM experiment.
* Ground up and rendered fat.

There are worse ways to deal with back-to-work anxiety.

AI tech bros strike me as the kind of people who, had they lived in medieval Europe, would have invented a machine for praying the rosary. The point of some tasks, *especially* tedious and repetitive ones, is the effect it has on human cognition. Losing the time to actually *think* hurts us all.

This is a wholly minor rant, but for the sake of my mental health, I'm going to need to USPS to stop claiming that packages will get to me in anything under a week, especially if they're going to leave them "in transit" for four or five days while they pretend every sorting center isn't backlogged.
