I second working from the stem end, you can cut off the florets where their stems diverge off the main stem, and then subdivide the large ones. Recs for eating: steam it then 1) toss w/butter+Parmesan+crumbs, 2) chill & toss w/vinaigrette, 3) aloo gobi, 4) cheese sauce, 5) butter+oregano+capers
