Chicken Pesto Roulade

chicken stuffed with pesto, lemon pepper, and slabs of queso fresco, pan seared and then finished in the oven. this was way easier than a pork tenderloin roulade, and went faster too

Smoked Salmon and Goat Cheese Bites

easy, although I would absolutely recommend doing this with a lettuce leaf rather than raw radicchio, it's too bitter. I'm sure it was for color instead of flavor consideration. also, the recipe worked out to 2x as much goat cheese as salmon, which was A LOT
