Every time we make a new pan, we think we've covered all the bases.
But when 1 of our stockists came to see us & said, “well it would be perfect, if only it were a bit deeper” and felt so strongly that we got to work & made one.
The sauteuse - deep sides, large capacity & a broad cooking base.

We are naturally drawn to the fast prawn and pea curry in a prospector pan and José Pizarro’s prawn pil pil tortilla in a chef’s prospector pan.

In Saturday’s (18.10.2025) Telegraph magazine Diana Henry writes about creating “no-fuss fish feasts with just five ingredients”, including a dish of mussels, “ready in a few shakes of the pan” with ‘nduja and white beans, cooked in her prospector pan.

Autumn colours, autumn flavours.
Pasta with a creamy mushroom sauce, gently warmed with the addition of black pepper and nutmeg, speckled with tarragon, parsley and chervil and carefully stirred together in a chef's prospector pan.
