Um... just wondering where you're getting the parentage info from? National Fruit Collection (UK) doesn't list anything, and Cummins website says 'unknown'.

Hogg (1851) said he thought Lindley (1831) was right in thinking one parent might be 'Nonpareil', which is a very old apple indeed... 🤔

Oh, I do have a glass weight on top of the plums to hopefully keep them submerged. The book suggests you can use a zip-lock bag of water as a substitute if you don't have fermentation weights to hand.

In this case it's just plums cut into eighths, plus 2% of their weight in salt, well mixed together and then put into a fermentation jar with a suitably ventilated lid. The plums become submerged in their own juices as the salt draws out the moisture. Method via 'The Noma Guide to Fermentation' 👍
