iirc @dog-envier.bsky.social put me onto this. i like soft and silken tofu too but freezing gives it a really nice flakey texture

freeze tofu > thaw in fridge (i do this on weekends) > press out water w towel (freezing changes the texture so u can press v firmly) > apply dry rub (lately chili powder, five spice, basil, salt) > flash fry > cook greens in oil
