What most people know as cinnamon is actually Cassia. Sri Lanka is where most real cinnamon originates and this is how it is made. The bark is shaved off. The first layer is the cinnamon, which is peeled and dried for 7 days. The bark is burned (usually burned to distill its leaves into oil)
