Have a holiday potluck to attend and looking to keep things weird?

These brownies are low effort, made with a can of Campbell's condensed Cheddar cheese soup, and yet are somehow the best brownies I've ever made from a convenience recipe.

I promise they don't taste like cheese.

Ingredients common to all variations include: 1/2 cup butter or margarine, 1 can condensed Cheddar cheese soup, 2 beaten eggs, 1 1/2 cups all-purpose flour, 2 tsp baking powder. Variation 1 adds to that base: 12 oz semisweet chocolate pieces, 1/2 cup sugar, and 1 cup chopped pecans. Variation 2 adds to that base: 12 oz butterscotch chips, 1/2 cup packed brown sugar, 1 cup flaked coconut, and reduces butter to 1/4 cup. Variation 3 adds to that base: 12 oz white chocolate broken into chunks, 1/2 cup light corn syrup, and 1 cup pistachios. Directions: Heat oven to 350. Grease 13x9 inch baking pan. In a saucepan over medium heat, melt butter. Reduce heat to low, add chocolate of choice, stir until melted, and remove from heat. Beat in soup, sweetener, and eggs with a spoon. Add flour and baking powder, stir until blended. Stir in 1/4 cup of optional nuts, spread in pan, and top with other 1/4 cup optional nuts. Bake 25 to 35 minutes until top springs back. I've been struggling to get tasks done in the midst of the world being what it is. So I decided to start doodling small victories.

This morning's achievement finally turns off the blinking light that has been taunting me for six weeks.

THE MONSTER'S CHRISTMAS is more an ad for the natural wonders of New Zealand than it is a holiday tale.

When I bought the Veselka Cookbook, I had no idea the oatmeal would be my go-to recipe. It's a perfectly fluffy addition to a cold winter morning and you need it in your life.

What was in it that was so special? (He's not the only one who appreciates our oatmeal—The New York Times has named it the best oatmeal in New York City.) I explained tha twe use half milk and half water for the liquid, and perhaps that was giving the oatmeal its unique flavor. He nodded thoughtfully, and a couple days later I ran into him again. He'd tried the half milk and half water method, but still, the oatmeal at Veselka just tasted better than his own. Had he let it sit before serving it? He shook his head and went on his way. A few days later, same story. This went on for several weeks, with my going over the Veselka oatmeal method with him every time we encountered each other, and finally, after eight or ten tries, he came to me with a big smile and said he'd gotten it just right—but he still orders oatmeal at Veselka. Go figure." Veselka's oatmeal recipe, which serves 2. Ingredients: 1 cup whole milk, 1 cup water, 1 cup rolled oats, pinch salt. Directions: In a small pot, combine the 1 cup milk with 1 cup water and bring to a boil. Sprinkle in the oatmeal very gradually. Stir to mix. Add the salt and stir again. When the liquid returns to a boil, turn down to a simmer and cook, stirring frequently, until the oats are tender and all the liquid has been absorbed, about 5 minutes. When the oats are cooked, cover the pot and set aside off the heat for 5 minutes. Serve with raisins, walnuts, honey, maple syrup, sliced fruit, and anything else you like. Note from Natalie: I find that 7 minutes cook time is the sweet spot for me. Your timing may differ depending on your stove.
