The bones from rotisserie chicken make great stock as well. Strip the chicken for the soup, throw the carcass in a pot with some water and mirepoix veggies if you have them, and reduce it by half or so

If the sourdough you're eating is "too tart in general" then you're not eating sourdough, you're probably eating white bread made with vinegar. I have a sourdough starter that's over 4 years old, the bread it makes has a faint "sour" smell but no tartness whatsoever, just a fantastic crumb and crust
