I've given up trying to make my own and keep a supply of McCains frozen jacket spuds in the freezer. 4 mins in microwave, 5 mins in the airfryer to crisp up the skin & they are always nice and fluffy on the inside. As with mash, I have surrendered my soul to the frozen food giants!
