Now found this, shims should be fine 🥶 I'll just keep an eye on the flanges (and a thermocouple for good measure). The 278 K is just a PSA. Guess I'll have another go tomorrow :)

This is my go-to for crème-brûlée, much faster than the small kitchen one. The hardware store that I used to work at also sold smaller torches that had both pipe soldering and kitchen icons on the packaging😅. If all you have is a hammer...
