This is a chart I use. I temp the dough and then let it bulk ferment for the time suggested. Then shaping and in bannetons to cold ferment.

Degray Lake State Park in Arkansas. We really enjoyed our stay at the lodge. A nice swimming pool and hot tub with view of the lake.
The lake is owned by the Corps of Engineers so there isn’t any development on the lake except for the state park.
Beautiful clean water and nice facilities.
