"Although Sugaring-off, painted by Moses in 1955, inspired a plethora of pastiche images marketed as Christmas cards, including her own ‘remix’ version for Hallmark, the activities portrayed are associated with early spring. Now, on first seeing this, I accepted it as a Christmas event because I had heard of the tradition of villages coming together to cook a huge communal gumbo in massive outdoor cauldrons. But that tradition correlates more with the southern sates of the USA where such thick snow is uncommon. So what’s going on? Of course, the title gives things away… Take note of the tiny documentary details that Moses includes, such as pots pegged to several of the trees in the background. This is the harvesting and boiling-down of maple syrup, traditionally carried out when the spring days bring the thaw, but the night still freezes, and the sap rises to swell the nascent buds. The harvesters are bringing their raw sap to add to the big pots where it is boiled until it begins to crystallise into sugar."
