Flavor and consistency at the bottom are great. However, there appears to be a layer of fat/butter(?) that rose to the top that shouldn't be there. I wasn't paying enough attention at the beginning and just assumed some butter that had formed in the cream while in the container would mix back in.

Yummy, used the dry rub from ribs and added some more black pepper for the coat, has a nice zing. Took it to 150°F then held for 5 minutes based on this pasteurization chart:
